A Couple of family favorites...

 

Mama Perry’s Coconut Pie

4 eggs, beaten

1 3/4 c. sugar

½ c. self-rising flour

2 c. sweet milk

2 t. vanilla

10-14 oz. fresh grated coconut*

½ stick margarine, melted

 

Mix all together and pour into 2 pie plates.
Bake at 350º-375º for about 40 minutes or until solid in the center.
(Makes its own crust!)
*You can use purchased coconut, however, I remember Ma Pur cracking and grating her own.

 

 

Ma Perry’s Corn Pudding

1 can corn, drained

1 egg

½ c. water

1 c. sugar

salt & pepper to taste

3 T. flour

½ stick margarine

 

Combine corn, egg, half of water, sugar, salt and pepper.
Sprinkle flour over this mix. Mix well. Pour into baking dish and put margarine pats
over top of pudding. Bake 30 minutes at 350º. Stir.
If pudding is getting dry, add remainder of water and bake 30 more minutes until firm.
